London Dry Gin

The highest quality has a name: "London Dry. This predicate is not geographically limited to London, but is reserved exclusively for gins that distill natural botanicals and dispense with subsequent flavoring, coloring and sweetening. This is why we also speak of the gin "purity law". To elicit the aromas from the botanicals in this way is certainly the stoniest but at the same time most rewarding way. London Dry Gin originated in London in the 19th century. It was born from improvements in distillation, in particular the invention of the Coffey still, which made it possible to distill a high-quality alcohol cheaply and efficiently. Previously, gin was sweet, but this new spirit did not need to be sweetened to mask the flavor, allowing the botanicals such as juniper to come to the fore. Nowadays, London Dry Gin does not have to come from London, it is a style rather than a place with an EU legal definition. It must be produced by distilling natural botanicals using neutral alcohol with an alcohol content of 96% ABV. Nothing may be added after distillation except water. It must have a minimum strength of 37.5% alcohol.
